1) Question: Why are some fillets white in color and others are red?

Answer: It really depends on the fish, the process remain the same. The fillets will vary in color.

2) Question: What are the size of the pieces?
Answer: normally 4"×3" but they do vary in size.

 3)Question: How long is it good for?

Answer: Self-Stable (means up 12 months) are room temperature. We have tested our product to 18 plus months, remains stable, set it thru 30 freeze/thaw- remained stabled. So, honestly we expect it to last 24 months be we do not know.
